Hawaiian Frittatas


  • 6 Eggs
  • Eggplant
  • 6 rashers of Bacon
  • Cream / milk
  • Pineapple
  • Batter
  • Garlic chives
  • 1/4 Red pepper
  • Salt


Dice red pepper and garlic chives then mix together with eggs and cream and salt .

Grease a cup cake baking tray – neatly place 1 bacon rasher at the bottom of each cup . Then pour egg mixture on top .

Bake in over for about 10 min at 150 checking constantly – time will vary depending on how you like your eggs .

Make a batter ( the same from the onion ring recipe used here, http://bambazonke.co.zw/orange-honey-sticky-ribs-with-sweet-potato-fries-onion-rings/ ) Cut egg plant into medium thick slices and cover  in batter then deep fry .


Put deep fried egg plant at the bottom followed by a fresh pineapple slice then your frittata ( baked egg mixture ) and voila!
