Marlborough House Omelette – Royal Recipe

3 egg yolks

2 egg whites 

2 tablespoons cream

Fine salt and pepper


Whisk egg yolks and cream lightly together, strain, then whisk in the egg whites not too stiffly beaten together. Season with salt and pepper. Cook quickly on one side only in clarified butter in an omelette pan. 

Serve as per your preference.
