Orange & Honey Sticky Ribs
Colcom Smoked Ribs
1 medium sized sweet potato
1 large onion
3 Tablespoons Self Raising Flour
Salt to Taste
3 heaped tablespoons Mayonnaise
2 teaspoons of Dr. Trouble Chilli Sauce
THE RIBS: Mix the honey and Worcester sauce in a casserole pan where you will cook your ribs, squeeze the full 1/4 orange and mix it up. Place defrosted ribs in there and coat with the marinade. Pop into the oven for about 20 – 30min at 150 -180 degrees. Checking and basting frequently.
THE SWEET POTATO FRIES: Peel and then cut sweet potato into desired sized – medium thickness recommended. Salt to taste before deep frying. Then deep fry one small batch at a time.
THE ONION RING BATTER: Mix flour, eggs, milk and cream to a smooth paste of medium dropping consistency adding milk as needed. Cut onion into thick rings then separate. Dip in batter and deep fry after your fries are done.
